Egg Noodles And Pork Casserole - cooking recipe
Ingredients

9 oz egg noodles
1 None leek, trimmed, washed and sliced
1 tbsp olive oil
10 oz pork, diced
1 can sweet corn (about 14 oz), drained
4 None eggs
1 cup reduced-fat milk
1 pinch grated nutmeg
2 tbsp butter
2 slices stale white bread, grated
Preparation

Preheat the oven to 400\u00b0F. Cook the noodles in boiling salted water according to package instructions. In the last 3 mins of cooking time, add the sliced leek.
Heat the oil in a frying pan, brown the pork, then remove from pan. Drain the noodles and leeks and combine with the corn and pork.
Beat eggs and milk together, and season with salt, pepper and nutmeg. Grease a large, shallow baking dish or 4 small ramekins. Fill with the pork and noodle mixture and pour the egg mixture over the top. Bake for 20-30 mins.
Melt the butter in a pan, add bread crumbs and saute until golden. 10 mins before the end of cooking, sprinkle the breadcrumbs over the baked noodles and pork.
