Salmon And Zucchini Fritters With Avocado Salsa - cooking recipe

3/4 cup self-rising flour
1 tbsp oil
1 None egg, separated
1 (15 oz) can salmon, drained, flaked
1 None zucchini, grated
2 None green onions, sliced
None None Avocado Salsa
1 None avocado, chopped
1 None red pepper, seeded, chopped
None None lemon juice, to taste
None None salad, to serve
Preparation

Sift together flour and a pinch salt. Whisk together 2/3 cup water, oil and egg yolk. Add to flour and mix until smooth. Set aside for 15 mins then mix in salmon, zucchini and green onions. Season. Whip egg white to stiff peaks then fold into batter.
Heat a little oil in a frying pan over high heat. Spoon heaped tablespoonfuls of batter into pan. Cook for 2-3 mins per side, until golden and cooked through. Drain on paper towels.
Meanwhile, to make the salsa, combine avocado, pepper and lemon juice. Season.
Serve fritters with avocado salsa and salad.
