Southwest Turkey Sandwich - cooking recipe
Ingredients

1/3 cup sour cream
1 clove garlic, peeled and crushed
1/2 None small lemon, zest and juice
1/4 tsp cayenne pepper
4 None parbaked rolls
1/3 stick butter
1 None small butter lettuce, leaves separated and washed
1 None red pepper, deseeded and thinly sliced
1 None green pepper, deseeded and thinly sliced
7 oz sweet corn, drained
1 None onion, peeled and thinly sliced
4 None large slices turkey breast
4 tbsp spicy tomato salsa
Preparation

Preheat the oven to 400\u00b0F. To make the dressing, mix the sour cream, garlic and lemon juice and zest in a bowl and add half the cayenne pepper. Season lightly with salt and freshly ground black pepper.
Bake the rolls in the oven following the package instructions. Cool for 5 mins then cut each roll in half horizontally. Spread the cut sides of the rolls with butter. Sandwich the rolls together with layers of some of the lettuce leaves, peppers, corn and sliced onion along with the turkey slices and tomato salsa.
To make the salad, mix the rest of the lettuce, sweetcorn, onion and peppers in a bowl and add the dressing. Sprinkle with the rest of the cayenne pepper. Serve the salad with the sandwiches.
