Smoked Salmon Stacks - cooking recipe

Ingredients
    3/4 cup cream cheese
    2 tbsp chopped fresh chives
    1 tbsp chopped fresh dill, plus extra sprigs, for garnish
    1 tbsp baby capers, rinsed
    2 tsp lemon juice
    8 None ready-made pancakes (unsweetened)
    2 cups arugula
    7 oz smoked salmon
    None None lemon wedges, to serve
Preparation
    Place cream cheese, chives, dill, capers and lemon juice in bowl and stir well to combine. Season with salt and pepper to taste.
    Lay pancakes on board and divide cream cheese mixture evenly between them, spreading mixture to edges. Top each with some arugula and smoked salmon.
    To serve, layer one pancake on top of another. Repeat with remaining stacks so you end up with 4 stacks of 2 pancakes. Garnish with dill and black pepper. Serve with lemon wedges.
