Fiery Grilled Cod With Coleslaw - cooking recipe
Ingredients

2 tbsp olive oil
3 tbsp lime juice
3/4 tsp lime zest
1 tbsp fresh mint leaves, chopped
1 tbsp fresh cilantro leaves, chopped
2 cups julienned bell peppers
1 cup julienned jicama
1 cup julienned seedless cucumber
1/4 cup shredded carrot
1/4 cup thinly sliced scallions
3 tbsp vegetable oil
2 tbsp Cajun seasoning blend
6 (6 oz) cod fillets
2 cloves garlic, minced
10 oz baby spinach or arugula
Preparation

Preheat grill. Whisk together 1 tbsp olive oil, 1 tbsp lime juice, 1/4 tsp lime zest and herbs. Add vegetables and scallions. Toss gently to coat. Season then set aside.
Whisk together vegetable oil, Cajun seasoning blend and remaining lime juice and lime zest. Brush 1/2 mixture over cod fillets and grill for 8 mins, or until fish flakes easily with fork, brushing with remaining seasoning mixture.
Meanwhile, in a large frying pan, heat remaining olive oil over medium-high heat. Cook garlic for 1 min. Add baby spinach and cook for 1 min, or until just wilted. Season. Transfer to a serving platter and top with cod fillets. Serve with coleslaw.
