Lamb Kebabs And Wraps - cooking recipe

Ingredients
    1 lb boneless lamb cut from leg, cut into 3/4 inch cubes
    1 None lemon, peel finely grated and lemon juiced
    1 tsp ground coriander
    1 tsp dried oregano
    1 clove garlic, crushed
    8 None soaked bamboo skewers
    6 oz haloumi cheese, thinly sliced
    1 head Romaine or iceberg lettuce, shredded
    2 None vine-ripened tomatoes, sliced
    None None Olive oil, to drizzle
    None None Prepared falafel, to serve
    1 tub (7 oz) tzatziki
    None None Lemon wedges, to serve
    None None Pita bread, to serve
Preparation
    Toss lamb with lemon peel and juice, coriander, oregano and garlic in a large bowl. Season to taste. Refrigerate 30 mins to marinate. Thread lamb onto skewers.
    Heat a grill pan on medium heat or preheat the grill to medium. Grill skewers 3-4 mins each side, until cooked to desired doneness.
    Grill haloumi 30 seconds each side.
    Arrange lettuce and tomatoes on a platter; drizzle with oil. Arrange lamb, haloumi and falafel on another platter with tzatziki and lemon wedges.
    Serve with pita bread for guests to make their own wraps.
