Bacon-Wrapped Pork Meatloaf - cooking recipe

1 1/2 lb ground pork
1 None medium onion, grated
2 cloves garlic, minced
7 oz button mushrooms, finely chopped
1 tbsp fresh thyme, finely chopped
1/3 cup fresh flat-leaf parsley, finely chopped
2 None eggs, lightly beaten
1/4 cup fresh breadcrumbs
1/2 tbsp hot chili sauce
1/2 tbsp Dijon mustard
2/3 cup smoky barbecue sauce
8 slices bacon
None None mixed greens, to serve
Preparation

Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Arrange a wire rack on top.
Combine ground pork, onion, garlic, mushrooms, herbs, eggs, breadcrumbs, chili sauce, mustard and 1/2 cup barbecue sauce. Set aside.
Arrange bacon on a cutting board, overlapping slightly. Place ground pork mixture across the center then shape into a loaf and bring bacon over sides to meet. Turn over and place on wire rack. Bake for 40 mins. Brush with remaining barbecue sauce and bake for 10 mins, until firm and cooked through. Let cool for 10 mins then slice.
Serve with mixed greens.
