Ingredients

8 oz chocolate wafer cookies
8 tbsp (1 stick) butter, melted
1 1/2 tsp unflavored gelatin
12 oz (1 1/2 pkg) cream cheese, softened
1 1/4 cups heavy cream
1 tsp vanilla extract
1/2 cup sugar
6 oz white chocolate, melted and cooled
5 oz Oreo cookies, all but 1 broken into pieces
2 oz semi-sweet chocolate, melted

Grease and line the bottom of a 9-inch springform pan with parchment paper. Process chocolate wafer cookies until fine crumbs form. Transfer to a bowl. Stir in melted butter. Press evenly onto bottom and halfway up sides of prepared pan. Refrigerate.
Sprinkle gelatin over 1/4 cup warm water in a small bowl. Let stand in a small saucepan of simmering water, stirring until the gelatin has dissolved. Cool for 5 mins.
Beat cream cheese in a large bowl with an electric mixer until smooth. Beat in cream, vanilla and sugar until combined. Add the gelatin mixture and beat until just combined. Fold in the cooled white chocolate, then gently fold in the broken Oreos. Pour over crust in prepared pan. Refrigerate for 3 hours, or until set.
Just before serving, place the melted dark chocolate in a small freezer bag. Snip the corner off and drizzle chocolate over cheesecake. Top with the extra Oreo.
