Baked Ham With Cherry Glaze - cooking recipe

Ingredients
    10.5 oz frozen pitted cherries
    2/3 cup firmly packed light brown sugar
    1 inch fresh ginger, peeled and grated
    4 None cardamom pods, bruised
    2 None whole star anise
    1/2 cup maple syrup
    1/4 cup cognac or sherry
    1 (15 lb) half leg of ham, rind removed, fat scored diagonally at 3/4 inch intervals to form a diamond pattern
    2 tbsp whole-grain mustard
Preparation
    Preheat oven to 400\u00b0F. Line a deep large baking dish with foil.
    To make the cherry glaze, bring cherries, brown sugar, ginger, spices, maple syrup and cognac to a boil. Using a slotted spoon, remove cherries and reserve. Reduce heat and simmer, uncovered, for about 8 mins, or until mixture thickens slightly. Let cool. Remove cardamom.
    Place ham on a wire rack in the baking dish. Wrap shank in foil. Bake for about 15 mins, or until fat has opened up. Reduce oven to 325\u00b0F. Brush mustard over ham then brush with glaze. Sprinkle with cherries. Bake, uncovered, for about 1 hour 30 mins, basting with remaining glaze every 30 mins, or until browned. Let rest for 10 mins before slicing.
    Meanwhile, strain pan juices and skim off fat. Bring pan juices to a boil.
    Serve ham warm or at room temperature with pan juices.
