Salmon With Miso Soba Noodles - cooking recipe

Ingredients
    1 tbsp oil
    4 None salmon fillets (about 6.5 oz each)
    4 servings instant miso soup
    9 oz soba noodles
    4 cups baby spinach
    1/3 cup mayonnaise
    1 tsp wasabi paste
    None None Flaked sea salt, to serve
Preparation
    Heat oil in a frying pan on medium. Season salmon skin and cook, skin side down, for 4 minutes. Turn and cook for 3-4 minutes or until cooked to desired doneness. Transfer to a plate. Keep warm.
    Meanwhile, bring 6 cups water to boil in a saucepan. Add miso, stirring until smooth. Add soba noodles. Boil 3-4 minutes, until tender. Remove from heat and stir in spinach.
    To make wasabi mayonnaise, combine mayonnaise and wasabi paste in a small bowl. Set aside.
    Ladle noodles and broth into serving bowls. Top with salmon. Accompany with wasabi mayonnaise and sea salt.
