Baked Eggs With Bacon, Tomato And Spinach - cooking recipe

2 tsp vegetable oil
4 oz bacon, finely chopped
1/2 None small red onion, finely chopped
5 oz cherry tomatoes, halved
8 None large eggs
3 oz Cheddar cheese, grated
2 oz spinach leaves, to serve
None None toast, to serve
Preparation

Preheat oven to 325\u00b0F. Lightly grease 4 x 2-cup ramekins. Place on a baking sheet. Heat oil in a medium frying pan on high. Saute bacon and onion 3-4 mins, until onion is tender. Add tomato and cook 1 min. Cool. In a bowl, whisk together bacon mixture, half the eggs, half the cheese and the spinach. Season to taste and divide mixture between prepared ramekins. Break remaining eggs, one at a time, into a small bowl. Carefully slide 1 egg into each ramekin. Sprinkle each with some of the remaining cheese. Bake 20-25 mins, until yolk is just set. Serve with toast.
