10 oz almonds
1/2 cup sugar
2/3 cup cocoa powder
4 None large egg whites, lightly whisked
1 tsp powdered sugar

Preheat oven to 375\u00b0F. Line 2 large baking sheets with parchment paper. For the dough, process the almonds in a food processor until they resemble crumbs, but not more. Transfer to a medium bowl. Add the sugar then sift in the cocoa powder and stir until well combined. Add the egg whites and beat with a wooden spoon until well combined and slightly aerated.
Place tablespoons of the mixture, 1 1/2 inches a part, on the prepared baking sheets. Gently shape into smooth 2 inch rounds. Bake, switching the position of the baking sheets halfway through, for 10-12 mins or until lightly browned around the edges. Cool completely on the sheets then dust with powdered sugar to serve.
