Chicken And Mango Salad - cooking recipe

Ingredients
    1 x 14 oz can mango slices in syrup, drained, juice reserved
    1 tsp soy sauce
    1 tbsp sweet chili sauce
    1 lb boneless chicken breasts, cut into thin strips
    3 tsp Cajun or Creole seasoning
    1 tbsp olive oil
    1 small head lettuce, leaves separated
    7 oz cherry tomatoes
    1 None cucumber, thinly sliced
    1 None red onion, thinly sliced
    1 None small red pepper, deseeded, thinly sliced
Preparation
    Dice 1/4 of the mango and set aside. Puree remaining mango and reserved syrup in a food processor or blender. Transfer puree to a bowl. Add soy sauce, sweet chili sauce and diced mango and stir to combine.
    Place chicken and seasoning in a bowl and toss to coat. Heat oil in a large frying pan on medium. Add chicken and cook, stirring, for 3-4 mins, until golden and cooked through.
    Place lettuce, tomatoes, cucumber, onion and pepper in a large bowl. Season and toss to combine. Add chicken and mango dressing, and gently toss to combine. Serve immediately.
