Strawberry And Elderflower Mocktail - cooking recipe

Ingredients
    8 oz strawberry, hulled and halved
    1 None vanilla bean, split lengthwise and seeds scraped
    1 tbsp sugar
    1/2 cup elderflower cordial
    4 sprigs fresh mint
    2 1/2 quarts sparkling mineral water
Preparation
    Mix strawberries, vanilla seeds and sugar in bowl. Cover with plastic wrap. Refrigerate at least 1 hour, stirring once.
    Place 1/2 of the strawberries and syrup in each large pitcher. Add 1/2 of the cordial and mint leaves. (Or use 1 large beverage dispenser.) Top with mineral water. Serve over ice.
