Hawaiian Toast - cooking recipe

Ingredients
    2 tbsp oil
    4 None pork steaks (about 120g each)
    200 g carrots, halved lengthways and thinly sliced
    300 g apricots, pitted and diced
    75 g almonds, coarsely chopped
    2 tbsp apricot jam
    4 thick slices white bread
    150 g gouda, grated
    5 stems parsley, chopped
Preparation
    Heat oven to 400\u00b0F. Heat oil in a pan and cook the pork on each side for about 2 minutes. Season with salt and pepper then set aside.
    Add the carrots to the pan and saute for about 3 minutes. Stir in the apricots and almonds and cook for another 3 minutes. Season with salt and pepper, stir in the jam to heat through then remove from the heat.
    Place the slices of bread on a lined baking sheet. Top with the pork and apricot mixture. Sprinkle with cheese and bake for about 12-15 minutes. Serve with a sprinkling of chopped parsley.
