Parmesan Mash - cooking recipe

Ingredients
    2 1/4 lb potatoes, peeled and cut into 1 inch pieces
    3 tbsp butter, softened
    3 oz grated Parmesan cheese
    3/4 cup hot milk
Preparation
    Place potatoes into a medium saucepan and cover with cold water. Boil, uncovered, for about 15 mins, or until tender. Drain.
    Using the back of a wooden spoon, push potatoes through a fine-mesh sieve (or use a potato ricer) into a large bowl. Stir in butter and cheese. Gradually add hot milk, stirring until mashed potatoes are smooth and fluffy.
