Peach And Rhubarb Cobbler - cooking recipe

Ingredients
    14 oz rhubarb, trimmed and cut into 1 1/2-inch lengths
    1/3 cup granulated sugar
    2 cans (15 oz each) sliced peaches, drained, 1/4 cup juice reserved
    1/3 cup milk
    1/3 cup firmly packed brown sugar
    1 None egg
    2 tbsp maple syrup
    2 tbsp butter, melted
    1 1/2 cups flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp ground ginger
    None None Whipped cream, to serve
Preparation
    Preheat the oven to 400\u00b0F. Place 6 shallow baking dishes on a baking pan.
    Combine rhubarb, granulated sugar and peach juice in a medium saucepan. Stir on medium heat until sugar has dissolved. Simmer, covered, for 4-5 mins, until tender. Stir in peaches. Spoon into dishes.
    For the cobbler topping, whisk milk, brown sugar, egg, syrup and butter in large bowl. Sift flour, baking powder, baking soda and ginger over mixture. Fold until combined. Spoon evenly over fruit.
    Bake for 15-20 mins, until browned and bubbling. Serve warm with whipped cream.
