Baked Potatoes Stuffed With Tuna - cooking recipe

20 None small baking potatoes
1 1/2 tbsp butter
2 oz button mushrooms, finely chopped
1 clove garlic, minced
3 oz tomato and onion flavored tuna, drained
1.5 oz baby spinach, roughly chopped
2 tbsp light sour cream
2 tbsp grated Cheddar cheese, plus extra to sprinkle
None None fresh chive snippets, to serve
Preparation

Preheat oven to 400\u00b0F. Lightly grease a baking tray.
Boil or microwave potatoes for 8-10 mins, until tender. Cut off tops and carefully scoop out insides. Arrange potatoes on a baking tray.
Meanwhile, melt butter in a large frying pan over high heat. Saute mushrooms and garlic for 2-3 mins, until tender. Add tuna and spinach. Stir until spinach wilts then transfer to a large bowl and let cool slightly. Once cool, mix in sour cream and cheese. Season to taste.
Spoon mixture into potatoes and sprinkle with extra cheese. Bake for 5-10 mins, until golden brown. Serve sprinkled with chives.
