Rum And Raisin Loaf - cooking recipe

Ingredients
    1 cup raisins
    1/4 cup dark rum
    2 1/4 cups self-rising flour
    1/2 cup granulated sugar
    2 tbsp vegetable oil
    1 cup buttermilk
    4 1/2 tbsp butter
Preparation
    Preheat oven to 400\u00b0F. Combine raisins and rum in a small bowl.
    Combine flour and sugar in a large bowl. Make a well in the center then mix in raisin mixture, oil and enough buttermilk to make a soft sticky dough. Transfer to a floured work surface and knead until smooth. Press into a 6 inch circle then cut a cross in the top about 1/3 inch-deep. Brush top with a little extra buttermilk and dust with a little extra flour. Bake, covered, for 35 mins, or until the bottom sounds hollow when tapped.
    Serve warm with butter.
