Apple And Plum Crumble Cake - cooking recipe

Ingredients
    2 1/4 lbs apples, peeled, cored and diced
    2 1/2 cups apple juice
    2 tsp vanilla extract
    2 1/2 cups custard powder
    2 lbs plums, halved and stoned
    1 None cinnamon stick
    1/3 cup sugar
    4 1/3 cups all-purpose flour
    2 1/2 sticks butter, diced
    1 cup brown sugar
    1 pinch salt
    1 tsp vanilla sugar
    1 None egg
    1 cup mascarpone cheese
    1 2/3 lbs ricotta or cottage cheese
    2 tbsp powdered sugar
Preparation
    To make the apple mixture, put apples, 1 cup apple juice and 1 tsp vanilla extract in a saucepan and bring to a boil. Cover and simmer for 5 mins. In a bowl stir 1/4 cup apple juice into half of the custard powder until smooth. Remove saucepan from heat, add custard mix to the apple mixture and simmer for 1 min, while continuing to stir. Leave to cool, stirring occasionally.
    To make the plum mixture, put plums, 1 cup apple juice, cinnamon stick and 1 tbsp sugar in a saucepan and bring to a boil. Cover and simmer for 5 mins. In a bowl stir 1/4 cup apple juice into remaining custard powder until smooth. Remove saucepan from heat, add custard mix to the plum mixture and simmer for 1 min, while continuing to stir. Leave to cool, stir, and remove cinnamon stick.
    Preheat oven to 350\u00b0F. Grease a 12 x 15 inch baking tray. In a large bowl mix together flour, butter, brown sugar, salt, 1 tsp vanilla sugar and egg. When well combined, crumble pastry with your fingertips. Transfer two-thirds of the crumble to the baking tray, and press to make an even base. Arrange apple mixture on one half of the base and the plum mixture on the other half. Sprinkle with remaining crumbled pastry.
    Bake on the lower rack of the oven for 45 mins, then let cool slightly. Slice the cake lengthwise so that you have an apple cake and a plum cake. Slice the apple cake into 15 pieces and leave to cool on the tray.
    Combine mascarpone and ricotta in a bowl until smooth. Add remaining sugar and powdered sugar and mix well. Transfer the plum cake to a plate and coat with the mascarpone mixture. Top with the pieces of apple cake and chill for 2 hours before serving.
