Chinese Cabbage And Herb Salad With Beef And Tamarind Dressing - cooking recipe

Ingredients
    None None FOR THE TAMARIND DRESSING
    1 1/2 tbsp tamarind puree
    1/2 cup brown rice syrup or maple syrup
    2 tbsp lime juice
    2 tbsp fish sauce
    None None FOR THE SALAD
    1 tbsp vegetable oil
    10 oz beef stir-fry strips
    1/2 small Chinese cabbage, finely shredded
    3 cups baby spinach leaves
    1 None fresh long red chili pepper, thinly sliced
    3/4 cup roasted peanuts, chopped coarsely
    1/2 cup loosely packed fresh mint leaves
    1/2 cup loosely packed fresh cilantro leaves
Preparation
    For the tamarind dressing, whisk all ingredients in a small bowl until combined.
    Heat the oil in a wok on high heat. Stir-fry the beef for 3 mins or until cooked through.
    Place the beef in a large bowl with the cabbage, spinach, chili pepper, peanuts, herbs and dressing. Toss gently to combine.
