Cheese And Potato Rösti - cooking recipe

Ingredients
    2 1/4 lb medium-sized baking potatoes
    4 tbsp oil
    2 None onions, peeled and sliced into thin rings
    1/4 lb soft French cheese such as Munster or Brie, thinly sliced
    1 tbsp fresh parsley, chopped
Preparation
    Preheat the broiler. Cook the potatoes in salted boiling water for about 15 mins or until almost tender. Drain then rinse under cold water. Remove the skin and coarsely grate into a bowl.
    Meanwhile, heat the oil in a large deep frying pan and add the onion. Saute for 5 mins then add the grated potatoes and season. Cook over medium heat until a brown crust has formed on the bottom. Break up the mixture and stir with a wooden spoon then cook for another 10 mins.
    Top the rosti with sliced cheese and 1/2 the chopped parsley. Broil for 3-4 mins until the cheese is melted and bubbling. Serve from the pan garnished with the remaining parsley.
