Lamb Sausage And Feta Bruschetta - cooking recipe

Ingredients
    2 tsp vegetable or olive oil
    6 None thick lamb sausages
    1 None large tomato, cut into 1/2 inch pieces
    1 None Persian cucumber, peeled, cut into 1/2 inch pieces
    1 None small red onion, finely chopped
    2.5 oz Greek-style feta, cut into 1/2 inch pieces
    1 tbsp fresh oregano leaves, coarsely chopped, plus extra leaves to serve
    8 slices crusty white bread, toasted, to serve
    2 oz baby arugula, to serve
    None None lemon wedges, to serve
Preparation
    Heat 1 tsp oil in a frying pan over medium heat. Cook sausages, turning, for 10-12 mins, or until cooked through. Set aside, cover with foil and let rest for 5 mins. Slice thickly.
    Meanwhile, combine remaining oil, tomato, cucumber, onion, feta and oregano in a medium bowl. Season.
    To serve, place toast on serving plates. Top with arugula, sausage and Greek salad. Serve with lemon wedges and sprinkle with oregano leaves.
