Pasta With Blue Cheese And Prosciutto - cooking recipe

Ingredients
    1 pkg (20 oz) fresh stuffed pasta, such as agnolotti or ravioli
    1 tbsp oil
    4 oz prosciutto, thinly sliced
    1/4 cup chopped walnuts
    1 1/2 cups heavy cream
    5 oz creamy blue cheese, crumbled
    2 tbsp snipped chives
Preparation
    Cook the pasta in a large saucepan of boiling salted water according to the package directions. Drain.
    Meanwhile, heat the oil in a large skillet on high heat. Saute the prosciutto and walnuts for 2-3 mins, until the prosciutto is crispy. Transfer to a plate.
    Add the cream, 4 oz of blue cheese and the chives to the pan and season to taste. Bring to a boil on high heat. Reduce the heat to low and simmer for 3-5 mins, until the cheese has melted and the sauce has thickened slightly.
    Add the pasta and toss to coat. Serve topped with the remaining cheese, prosciutto and walnuts.
