Grilled Lamb Chops With Tomato & Olive Salsa - cooking recipe

1/4 cup loosely packed fresh oregano leaves
8 None lamb loin chops (1 3/4 lbs)
8 oz grape tomatoes, quartered
1/2 cup pitted kalamata olives, halved
2 tbsp French dressing
3 cups arugula
Preparation

Heat an oiled grill pan on high heat or preheat the grill to medium-high. Finely chop half the oregano; combine with chops in a large bowl. Season. Grill chops for 4 mins each side, or until cooked to desired doneness. Let stand, covered with foil, for 2--3 mins.
Meanwhile, for the tomato and olive salsa, combine tomatoes, olives, dressing and remaining oregano in a medium bowl. Season to taste. Serve with chops and arugula.
