Vietnamese Coleslaw - cooking recipe
Ingredients

2 None carrots, cut into matchsticks
1/2 None green papaya, cut into matchsticks
16 oz coarsely shredded Chinese cabbage
1 cup firmly packed fresh mint
1 cup firmly packed fresh cilantro
1 1/3 cup crushed peanuts, roasted
None None Lime Dressing
1/4 cup lime juice
1 clove garlic, minced
1 None fresh long red chili, chopped finely
2 tbsp grated palm sugar
2 tbsp fish sauce
2 tsp peanut oil
Preparation

Combine all coleslaw ingredients in a large bowl.
Whisk together all ingredients for lime dressing then pour over coleslaw. Toss gently to combine. Season to taste.
