1 1/3 lbs tuna, cut into 3/4-inch pieces
    1/4 cup light soy sauce
    1 tbsp wasabi paste
    1 tbsp lime juice
1 tbsp grated palm sugar or brown sugar
1 lb fresh thin egg noodles
    2 tbsp peanut oil
1 1/2 cups finely shredded cabbage
    1/2 cup sweet chili sauce
    1 tbsp fish sauce
2 None green onions, thinly sliced
Preparation
Combine the tuna, soy sauce, wasabi, lime juice and sugar in a medium bowl. Drain the tuna, reserving 2 tbsp of the marinade.
Place the noodles in a large heatproof bowl; cover with boiling water. Separate noodles with a fork; drain.
Heat half the oil in a wok on high heat. Stir-fry the tuna, in batches, until browned. Remove from the wok.
Heat the remaining oil in the wok. Stir-fry the cabbage until wilted. Add the noodles, reserved marinade, sweet chili sauce and fish sauce; stir-fry until the mixture boils. Season to taste. Serve the noodles topped with tuna and green onions.
