5 tbsp butter, melted
2 None eggs
1/4 cup granulated sugar
3/4 cup buttermilk
1 1/2 cups all-purpose flour
2 tsp baking powder
None None powdered sugar, for dusting
None None strawberry compote, to serve
None None fresh mint, to garnish
Preparation

Whisk 3 tbsp butter, eggs and sugar until creamy. Add buttermilk. Mix flour, baking powder and a pinch of salt and add to batter. Working in batches, heat remaining butter and cook 16 pancakes until golden on both sides. Dust with powdered sugar and serve with strawberry compote and garnished with mint.
