Chocolate Mint Brownies - cooking recipe

1 (20 oz) box brownie mix
8 oz cream cheese, at room temperature
4 oz white chocolate, melted
2 cups whipped cream
None None green food coloring
1/4 - 1/2 tsp peppermint extract
1 1/4 cups semisweet chocolate chips
8 tbsp butter
Preparation

Preheat oven to 350\u00b0F. Line a 9x13 inch baking pan with foil. Coat with cooking spray. Prepare brownie mix as package directs. Let cool.
In a mixing bowl, beat cream cheese, white chocolate and whipped cream on medium speed for 2 mins, or until smooth. Spread 1/2 over cooled brownies then chill for 20 mins. Tint remaining frosting green and add peppermint extract. Spread over brownies and chill for another 20 mins.
Meanwhile, in a microwave-safe bowl, melt chocolate chips and butter together. Stir until smooth. Let stand for 5 mins then spread over mint layer. Chill for 30 mins before cutting.
