Individual Onion And Smoked Cheddar Quiches - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None large Spanish onions, thinly sliced
    4 None large eggs
    3/4 cup heavy cream
    3 oz smoked Cheddar cheese, finely grated
    1/2 tsp fresh thyme leaves
    1 2/3 cups all-purpose flour
    1 oz Parmesan cheese, finely grated
    1/2 cup cold butter, coarsely chopped
    1 None egg yolk
Preparation
    To make the Parmesan dough, combine flour, cheese and butter in a food processor and pulse until crumbly. Pulse in egg yolk and enough ice water to make ingredients just come together. Wrap in plastic wrap and chill for 30 mins.
    Preheat oven to 400\u00b0F. Oil 6 - 3 1/2 inch round, loose-bottomed tart pans. Divide chilled dough into 6 pieces. Roll each piece out until 1/8 inch thick and use to line pans, trimming edges. Cover and chill for 20 mins.
    Place tart shells on a baking tray. Cover each tart shell with parchment paper and fill with pie weights. Bake for 10 mins. Remove paper and beans. Bake for 5 mins, or until light golden brown. Let cool.
    Meanwhile, heat oil in a large frying pan over medium-low heat. Cook onion, stirring, for 15 mins, or until caramelized. Remove from heat and let cool slightly.
    Whisk eggs and cream together. Season. Distribute caramelized onion between tart shells and cover with egg mixture. Sprinkle with cheese and thyme and bake for 25 mins, or until set.
