Baked Mussels In Chili And Ginger - cooking recipe
Ingredients

3 lbs large black mussels, scrubbed, with beards removed
1 piece (3 inches) fresh ginger, grated
2 cloves garlic, crushed
2 None kaffir lime leaves, finely shredded
2 None fresh long red chili peppers, thinly sliced
2 medium carrots, peeled and cut into matchsticks
2 medium red peppers, seeded and thinly sliced
1/4 cup kecap manis (thick sweet soy sauce)
1/4 cup lime juice
1 cup bean sprouts
1/2 cup loosely packed fresh cilantro leaves
Preparation

Preheat the oven to 425\u00b0F.
Combine mussels in large shallow baking dish with the ginger, garlic, lime leaves, chili pepper, carrot, pepper, 1/3 cup water, kecap manis and lime juice.
Bake the mussels, covered, for about 30 mins or until the mussels open (discard any that do not). Serve sprinkled with bean sprouts and cilantro.
