Mozzarella, Fava Bean And Pancetta Salad - cooking recipe

Ingredients
    1 tbsp olive oil
    6 slices thin pancetta
    10 oz fava beans, blanched, skins removed
    6.5 oz baby bocconcini, halved
    1/2 bunch fresh basil leaves
    1/2 bunch fresh parsley leaves
    1/2 bunch fresh mint leaves
    1 None lemon, zested and juiced
    1 tbsp extra-virgin olive oil
Preparation
    Heat oil in frying pan over medium heat. Fry pancetta for 1-2 mins, until crisp. Drain on paper towels. Break into pieces.
    Blanch fava beans in boiling water for 1-2 mins. Drain. Peel and discard skins.
    In a serving bowl, combine pancetta, fava beans, bocconcini, herbs, lemon zest, lemon juice and olive oil. Season.
