4 tbsp (1/2 stick) butter, at room temperature
1/3 cup sugar
1 None egg, at room temperature
1 1/4 cups self-rising flour
1/3 cup milk
1/2 tsp vanilla extract
1 tsp ground cinnamon
1 cup drained canned peaches, diced

3 tbsp butter, melted
1/4 cup sugar
1 tbsp ground cinnamon
Preparation

Preheat the oven to 400\u00b0F. Line a 12-cup mini muffin pan with paper liners.
Using a wooden spoon, beat butter and sugar in a large bowl until combined. Whisk in egg until combined. Add sifted flour. Stir in milk, vanilla extract, cinnamon and peaches until just combined; don't overmix. Spoon mixture into prepared pan.
Bake for 10 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
Dip muffin tops in warm melted butter. Dip in combined sugar and cinnamon. Serve warm or cold.
