Banana Bread - cooking recipe

1 cup mashed banana (from 2 large overripe bananas)
1 cup firmly packed dark brown sugar
2 None eggs, beaten lightly
3 tbsp butter, melted
1/2 cup buttermilk
1/4 cup molasses
1 1/2 cups flour
1 cup self-rising flour
2 tsp mixed spice, such as pumpkin pie spice
1 tsp baking soda
Preparation

Preheat the oven to 350\u00b0F. Grease an 8 x 4-inch loaf pan and line the bottom and long sides with parchment paper, extending the paper 2 inches over the sides.
Combine the banana, sugar, eggs, butter, buttermilk and molasses in a large bowl. Stir in the combined sifted dry ingredients (do not overmix; the batter should be lumpy). Spoon the mixture into the prepared pan.
Bake for about 1 hour until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
