Gazpacho With Feta Cheese - cooking recipe

Ingredients
    3 tbsp olive oil
    2 None onions, peeled and diced
    2 cloves garlic, peeled and finely diced
    1 tbsp tomato paste
    1 pinch cayenne
    1 pinch paprika
    1 pinch sugar
    4 cups tomato juice
    1 None baguette, preferably a day old, cut into cubes
    1 tbsp butter
    1/2 None cucumber, halved, deseeded and diced
    1/4 lb feta cheese
    1 tbsp fresh parsley, chopped
Preparation
    Heat 2 tbsp oil in a pan. Add onion and garlic and saute for 2-3 mins. Add tomato paste, a pinch of salt, cayenne, paprika and sugar. Add tomato juice, bring to a boil and simmer for 4-5 mins, stirring occasionally. Set aside to cool then chill.
    For the croutons, melt butter. Add cubed bread and toast until golden. Set aside to cool.
    Ladle chilled soup into 4 bowls and garnish with cucumber, croutons, crumbled feta and parsley. Drizzle with the rest of the olive oil.
