Spicy Turkey Quesadillas - cooking recipe

Ingredients
    4 None long red chili peppers, thinly sliced
    1/4 cup sugar
    2 tbsp lemon juice
    1 tbsp thinly sliced lemongrass
    2 None tomatoes, diced
    6 large flour tortillas
    1 cup grated Cheddar cheese
    1 cup baby spinach
    1 1/2 cups shredded cooked turkey
Preparation
    Place chili peppers, sugar, lemon juice, lemongrass and 1/4 cup water in a medium saucepan on medium heat. Simmer until sugar has dissolved. Add tomatoes and bring to a boil. Reduce heat to low; simmer for 15 mins, or until sauce has thickened. Set aside to cool.
    Sprinkle 3 tortillas with half the cheese. Top with spinach and turkey. Drizzle each with 2 tbsp sauce. Top with remaining cheese and tortillas.
    Heat a large nonstick skillet on medium-low heat. Spray with no stick cooking spray. Cook quesadillas, one at a time, for 2 mins each side, or until browned and cheese has melted. Cut into wedges and serve with sauce on side.
