Ingredients

1 1/3 lbs strawberries, hulled and sliced
1 1/4 cups sugar
1/4 cup lemon juice
Preparation

Combine strawberries, sugar and lemon juice in a 3-quart microwave-safe bowl. Microwave, uncovered, on High (100%) for 4-5 mins or until sugar has dissolved and strawberries are soft.
Place a small plate in the freezer.
Microwave jam on High (100%) in 3-min bursts for 12-15 mins. Spoon a little jam onto prepared plate. Place plate in freezer for 2-3 mins. Run a finger through center of jam. If jam begins to wrinkle and stays in place, it is ready. If not, continue to microwave, in 2-min bursts, then test again.
Pour into hot sterilized jars and seal immediately. Store in a cool dry place. Once opened, store in the refrigerator.
