Veal Meatballs - cooking recipe

Ingredients
    1 1/4 lbs ground veal
    2 None shallots, finely diced
    1 None egg
    1/4 cup breadcrumbs
    2 tbsp milk
    1-2 tsp coarse-grain mustard
    None None Zest and juice of 1/2 lemon, plus 1/2 lemon, thinly sliced
    8-10 None chives, finely chopped
    4 stems parsley, finely chopped
    3-4 tbsp vegetable oil
Preparation
    In a medium bowl, mix together the veal, shallots, egg, breadcrumbs, milk, mustard, lemon zest and juice, most of the chives and parsley, and salt and pepper to taste. With slightly wet hands, form the mixture into small meatballs.
    Heat the oil in a large nonstick skillet over medium heat. Add the meatballs and fry for 10-12 mins until cooked through, turning as needed. Add the lemon slices to the pan 1-2 mins before the end of cooking. Divide the meatballs among four bowls, sprinkle with the remaining chives and parsley and serve.
