Meatloaf And Mashed Potatoes With Peas And Carrots - cooking recipe

Ingredients
    2/3 cup white breadcrumbs
    3/4 cup milk + 6 tbsp
    1 1/2 lb ground beef
    2 None eggs
    1 None onion, peeled and finely diced
    1 tbsp mustard
    3 tbsp butter or margarine
    2 1/4 lb potatoes, peeled and halved
    1 1/4 lb carrots, peeled and sliced
    2/3 lb frozen peas, thawed
    2 tsp grated nutmeg
    1-2 tsp cornstarch
    None None fresh parsley, to garnish
Preparation
    Preheat oven to 325\u00b0F. Mix breadcrumbs with 6 tbsp milk and let absorb then mix with ground beef, eggs, onion and mustard. Season then form into an oval-shaped loaf. Place in a greased roasting pan and bake for 1 hour 30 mins.
    Meanwhile, cook potatoes in boiling salted water for about 20 mins. Heat 1 tbsp butter and saute carrots briefly. Add 3/4 cup water and cook for 5 mins then add peas and cook for another 5 mins.
    To finish, heat remaining butter and milk. Drain potatoes then add warm milk and mash. Add nutmeg and season to taste. Remove meatloaf from oven and keep warm. Strain pan juices into a clean saucepan and add 3/4 cup water, bring to a boil and whisk in cornstarch. Season to taste. Slice meatloaf and serve with vegetables, mashed potatoes and pan sauce. Garnish with parsley.
