Brown Mushroom Gravy - cooking recipe

Ingredients
    3 tablespoons oil
    1 lb mushroom, halved
    1/4 cup shallots or 1/4 cup green onion, minced
    1 garlic clove, minced
    1 1/2 tablespoons flour
    1 cup chicken broth
    1/2 cup dry white wine or 1/2 cup chicken broth
    1 tablespoon tomato paste
    1 tablespoon fresh parsley, chopped
    1/2 teaspoon thyme
    1/4 teaspoon salt
    1 pinch pepper
Preparation
    Heat 2 tablespoons oil in skillet over medium heat, add mushrooms and cook 5 minutes until soft. Remove mushrooms from skillet.
    Heat remaining 1 tablespoon oil, add shallots and garlic and cook 4 minutes until soft. Stir in flour. Gradually add broth and wine. Cook and stir until thickened, 5 minutes. Add tomato paste, parsley, thyme, salt, pepper and mushrooms. Heat thoroughly. Serve with meatloaf or turkey.
