Vegetarian Jollof Rice - cooking recipe

Ingredients
    2 onions, chopped
    1 green pepper, chopped
    1 red pepper, chopped
    2 garlic cloves
    10 ounces mushrooms, sliced
    2 carrots, diced
    1 (14 ounce) can chopped tomatoes (or use fresh)
    2 tablespoons tomato paste
    1 teaspoon cayenne pepper (to taste)
    1 teaspoon turmeric
    1 tablespoon thyme
    1 lb brown rice
    4 cups vegetarian broth
    1 cup frozen green pea
    cilantro (optional) or parsley (to garnish) (optional)
Preparation
    Make broth if using bouillion. (Bring 4 cups of water to a boil. Add bouillon and stir).
    Simmer the onions, peppers, garlic and mushrooms in 1/2 cup of the broth to soften.
    Stir in the carrots, tomatoes, spices, rice and remaining broth; bring to a boil and simmer 45 minutes, or until the rice is tender.
    Just before serving, adjust the seasonings if needed, stir in the green peas and garnish with cilantro or parsley.
