Italian Sausage Hash - cooking recipe

Ingredients
    1/2 lb Italian sausage or 1/2 lb turkey sausage
    2 cups potatoes, cubed
    1 onion, chopped
    1 cup red pepper, chopped
    1 cup green pepper, chopped
    1 cup zucchini, chopped
    3 garlic cloves, chopped
    1 tablespoon olive oil
    1 teaspoon black pepper, ground
    1 tablespoon italian seasoning
    1/4 teaspoon crushed red pepper flakes
    salt
    2 tablespoons parmesan cheese, grated (optional)
Preparation
    Begin my heating olive oil in a very large pan over medium-high heat. Crumble sausage into pan and brown completely.
    Add potatoes and onion, cooking approximately 10-15 minutes and stirring frequently.
    Add peppers and cook an additional 5 minutes occasionally. Potatoes and vegetables should begin to brown.
    Add garlic and zucchini. Cook an additional 5 minutes until zucchini is just tender.
    Season with pepper, Italian seasoning, red pepper flakes, and salt.
    Top with Parmesan if desired.
