Coconut Banana Muffins- Dairy Free - cooking recipe

Ingredients
    1 1/2 cups shredded coconut
    1/2 cup soymilk
    3 bananas
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 cup brown sugar
    1 teaspoon vanilla extract
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    1 3/4 cups flour
    1 egg
Preparation
    Preheat Oven to 400F.
    Put coconut, banana and soy milk into a blender and blend until mushy.
    Add the rest of the ingredients to the blender and mix.
    Pour the mixture into a pre-greased cupcake pan.
    Bake in the oven for about 15 minutes- check after 12 minute.
    Remove from oven after 'toothpick check' comes out clean.
    Let rest for 10 min or as long as you can resist.
