Onions (Oignons) Monegasque - cooking recipe

Ingredients
    500 g pickling onions, peeled
    2 teaspoons icing sugar
    2 tablespoons olive oil
    1 1/2 tablespoons tomato paste
    1 1/2 tablespoons vinegar
    1 1/2 tablespoons sultanas
    250 ml water
    bouquet garni
    1 teaspoon salt
    fresh ground pepper
Preparation
    Combine all ingredients in a medium saucepan.
    Bring to the boil and simmer covered until the onions are softened but still in shape.
    Cool & refrigerate.
