Glazed Coconut Banana Bread - cooking recipe

Ingredients
    2 cups flour
    3/4 teaspoon baking powder
    1/2 teaspoon salt
    1 cup sugar
    1/4 cup butter, softened
    2 large eggs
    1 1/2 cups mashed bananas (about 3)
    1/4 cup plain yogurt
    3 tablespoons dark rum
    1/2 teaspoon vanilla extract
    1/2 cup sweetened flaked coconut, plus
    1 tablespoon sweetened flaked coconut
    cooking spray
    1/2 cup confectioners' sugar
    1 1/2 tablespoons fresh lime juice
Preparation
    Preheat oven to 350\u00b0F.
    Spray a loaf pan with cooking spray.
    In a bowl combine flour, baking powder and salt, mix well.
    In a large bowl beat sugar and butter.
    Add eggs and beat well.
    Add bananas, yogurt, vanilla and rum, beat well.
    Add flour mixture, beat well.
    Stir in 1/2 cup coconut.
    Pour batter into loaf pan and top with 1 tbsp coconut.
    Bake for 1 hr or until a toothpick inserted into center comes out clean.
    Cool on a wire rack for 10 minutes, remove from pan, cool completely.
    Combine confectioners' sugar and lime juice to make a glaze, spoon over cooled bread.
