Gluten Free Banana Bread - cooking recipe

2 cups brown rice flour
1 teaspoon baking soda
1/4 teaspoon salt
4 large eggs
2 cups mashed ripe bananas (approx. 5 bananas)
1 cup coconut sugar
1/2 cup unsweetened applesauce
1/3 cup coconut oil, melted and cooled
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips or 1/2 cup chopped walnuts

Preheat oven to 350\u00b0F Grease two 8x4-in loaf pans and set aside.
In a large bowl, combine the flour, baking soda and salt then set aside.
In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla. Stir into the dry along with the chocolate chips, just until moistened.
Divide the batter between the two pans. Bake for 45 - 55 minutes or until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before removing from the pans to wire racks.
