Yam Croquettes - cooking recipe
Ingredients

4 medium sweet potatoes, cooked
2 tablespoons sugar
2 egg yolks
2 egg whites, beaten until frothy
2 tablespoons butter
2 teaspoons onion juice or 2 teaspoons onion powder
salt and pepper
3 cups crushed crackers
Preparation

Cook and mash sweet potatoes.
Add sugar, egg yolks, butter, onion juice, salt, pepper and paprika and mix well.
Chill, then shape.
Roll in egg whites, then in cracker crumbs.
Fry in deep, hot oil for 3 to 5 minutes or until golden brown.
