Black Bean Soup – Asian Style - cooking recipe

Ingredients
    2 teaspoons vegetable oil
    1 cup chopped onion
    2 teaspoons garlic
    1 cup nonfat chicken broth
    3 cups black beans
    2 tablespoons soy sauce
    1/8 teaspoon red pepper flakes
    1/8 teaspoon coriander
    2 tablespoons orange juice
    4 tablespoons low-fat sour cream
    2 tablespoons chopped scallions
Preparation
    Saute onions and garlic in oil for 5 minutes.
    Add the next 5 ingredients plus 3/4 cup water.
    Bring to a boil.
    Simmer for 20 minutes.
    Puree 3/4 of the soup and return.
    Stir in orange juice.
    Simmer 5 minutes.
