Southwestern Quinoa Salad - cooking recipe

Ingredients
    1 cup quinoa, uncooked
    2 cups water
    1/3 cup chopped tomato
    1/2 cup chopped celery
    1/2 cup frozen corn, defrosted
    1/2 cup canned black beans, rinsed and drained
    1/2 cup red onion, thinly sliced
    1/2 cup seedless cucumber, diced
    Dressing
    1 chipotle chile in adobo
    2 tablespoons light sour cream
    2 tablespoons fresh lime juice
    2 teaspoons chili powder
    2 teaspoons cumin
    3/4 cup fresh cilantro leaves
    1/4 teaspoon salt
Preparation
    Cook quinoa according to package directions.
    Spread on a baking sheet to cool.
    Mix cooled quinoa with vegetables and beans.
    Blend dressing ingredients in blender until smooth.
    Mix dressing with quinoa.
    Chill and serve.
