Banana Oat Chocolate Chip Cookies - cooking recipe

Ingredients
    1/4 cup unsalted butter, at room temperature
    1/2 cup brown sugar
    1 medium banana
    1 large egg, at room temperature
    1 teaspoon vanilla extract
    1/2 teaspoon apple cider vinegar
    1 cup old fashioned oats
    1 cup oat flour (or create your own by grinding 1 1/4 cups of rolled oats in a blender)
    1/4 cup flax seed meal
    1/2 teaspoon baking soda
    1 teaspoon cinnamon
    1 pinch nutmeg
    1/2 teaspoon salt
    1/2 cup semi-sweet chocolate chips (optional)
Preparation
    Preheat the oven to 350\u00b0F.
    Cream butter, brown sugar and banana.
    Beat in the egg, vanilla and apple cider vinegar.
    In a separate bowl, combine oats, oat flour, flax seed meal, baking soda, cinnamon, nutmeg and salt.
    Add dry ingredients to wet ingredients until just combined. Do not overmix.
    Fold in chocolate chips.
    Drop batter by heaping tablespoonfuls 2 inches apart onto a baking sheet lined with parchment or a silicone baking mat.
    Bake for 10-12 minutes, until browned around the edges.
    Cool the cookies on the baking tray.
